Located not far from Millau, along the Tarn river, on the foothills of the Lévézou, Viala du Tarn is a village starting at the altitude of 300m and culminating at more than 1000m.
I was looking for a solution to work in a countryside. In spite of my norman origins, I was seduced by htis region and I decided to come here, in the middle of nowhere. I launched my farm from stratch. I started by buying two hectares of fallow land. I then planted fruit trees and turned the rest od lands in fields. I finished by building the farm itself.
Today, I am selling my fresh fruits and my jams on local village markets. The first qulity of my jams is to be produced from high quality fruits. I take care myself of the fruit trees and I pick the fruits only when they are totally mature. I prepare myself my jams according to traditional recipes without any preservative, colouring nor any gelling agent. My jams are made with roughly 800g of sugar for every kilogram of fruits.
With this recipe, you can discover the very taste of the jams of ancient times.
